A while back, I bought some raspberries on sale for 87 cents a container. I bought a whole bunch of them to freeze and keep in the freezer. I pulled them to make this cake. Wow! Am I glad I did I had those raspberries!
Ingredients
1 box Duncan Hines Keto Yellow Cake Mix
6 Tbsp. cocoa powder
Water and eggs according to the cake mix directions
1 block cream cheese
1/2 cup chopped pecans or other nuts
1 container TruWhip whipped topping
1 cup fresh raspberries
2 tablespoons Lily’s chocolate chips or other sugar-free chocolate chips
Instructions
Duncan Hines makes boxed Keto cake mix. I have seen a yellow cake version and a chocolate cake version of these mixes, but most recently, I have only been able to get the yellow cake version. In order to make a yellow cake into a chocolate cake, I improvised by adding cocoa powder to the yellow cake mix.
Add the remaining ingredients listed on the box and bake according to the package directions. Spray a round cake pan with cooking spray. Spread the cake mix evenly in the cake pan.
Bake the cake according to package directions. When a toothpick comes out clean in the middle, remove the cake from the oven. Allow the cake to cool. Using a long serrated knife, split the cake in half from the side.
Make the filling by combining the cream cheese and chopped pecans in the bowl of a mixer. Beat until creamy.
Fold in the whipped topping until well combined.
Now you are ready to put the cake together in layers. Place one piece of the cake on a cake stand or plate. Spread with half of the cream cheese mixture. Cover the entire top with fresh raspberries.
Repeat the layers: chocolate cake and cream cheese mixture. For the top, cover the edge with a row or two of raspberries and sprinkle the chocolate chips in the middle. If you have any extra cream cheese filling left over, you can fill in any big holes between the two cakes.
This recipe appears difficult to make, but it really isn’t. It is a beautiful cake that can serve as a dessert for a celebration. It will definitely just make you happy!
