Vegetable Soup with Meatballs

My family loves meatballs almost as much as they do pizza. You can use frozen meatballs in this Vegetable Soup with Meatballs recipe, or you can make your own. Soup weather is upon us, so it is always nice to add a new soup recipe to the dinner recipe arsenal.

Ingredients

1 large onion, chopped

1 Tbsp. garlic, minced

1 can fire-roasted tomatoes

2 8-oz. cans sliced mushrooms, drained

1 32-oz. box beef broth

(Optional) 1 12-oz. bag frozen vegetables, any variety (I used a cauliflower and broccoli blend), or use fresh or canned vegetables

1 Tbsp. salt

1 tsp. pepper

1 Tbsp. Italian seasoning

1 bag frozen meatballs (if you are Keto, make your own meatballs. meatballs should be fully cooked before dropping into soup)

Instructions

Sauté some onions and garlic in some olive oil until translucent.

Add the fire-roasted tomatoes and mushrooms. Stir to combine.

Pour in the beef broth. Stir to combine. Bring to a boil.

Add the vegetables, seasoning and meatballs. Heat for about 15 minutes until bubbling and serve.

Additionally, you could serve it over some spaghetti or noodles to make this extra special.
