Gluten Free Layered Mint Brownies

Gluten-Free does not mean Keto by any means. A little extra care must be taken when making gluten-free treats. I have quite a few friends who must follow a gluten-free diet. These delicious brownies were made with the help of a gluten-free brownie mix, so nothing could possibly get past the gluten-free restrictions. Many people who are on a gluten-free diet are also dairy-free, but these brownies are not dairy-free. They are, however, very sweet and delicious!

Ingredients

1 package gluten-free brownie mix, made according to package directions

For the Mint Cream Layer:

1/2 cup butter at room temperature

2-2/3 cup powdered sugar

2 Tbsp. milk

2 tsp. peppermint extract

Pinch salt

Green food coloring

For the Chocolate Ganache:

6 Tbsp. butter

1 cup semi-sweet chocolate chips

1/4 cup heavy cream

Instructions

Prepare the gluten-free brownies according to the package directions using a 9×13 pan. When the brownies are done, allow them to completely cool.

While the brownies are in the oven or cooling, prepare the mint cream filling. In the bowl of an electric mixer, combine the butter and powdered sugar. Mix well using the whisk attachment.

Add the milk, peppermint extract, salt and green food coloring. Mix well. Add more food coloring if you want a darker green color for the filling. Spread the mint filling over the top of the cooled brownies.

Prepare the ganache. Place the chocolate chips, butter and whipping cream in a bowl. microwave for 20 seconds and stir. Continue to microwave in 15-second intervals until the chocolate is completely smooth,

Poor the ganache over the mint filling and spread to the edges. Cover with plastic wrap and place in the refrigerator until the ganache has hardened.

Remove from the refrigerator and cut into squares. These are really sweet but very delicious! A little bit goes a long way, so smaller squares are recommended.

The green color of the filling makes these brownies perfect for Christmas or St. Patrick’s Day but any day is fine with me.
