These sweet treats are bite-sized and chocolatey to fulfill that craving for something sweet. Brownie Bites are quick to mix together and have a little bit of crunchy chewiness that brownie lovers love!
Ingredients
1 package of medjool dates, pitted
1/2 cup pecans
1/2 cup sliced almonds
1/2 cup cacao powder (I buy cacao powder at Costco)
1/4 -1/2 cup of granulated Swerve sweetener
2 tsp. vanilla
1 1bsp. water
Unsweetened coconut flakes for rolling
1 Tbsp. Swerve
Instructions
Place the coconut in the bowl of a food processor and process until the coconut is small flakes. Remove and set aside in a small bowl. Add 1 tablespoon of Swerve and mix together.
Pit the dates, by cutting off the stem part off the top and bottom. Then slice dates in half lengthwise. Take out the long pit in the middle of the date with a spoon. It should come out easily. Add the dates, pecans, almonds, cacao powder, vanilla and water to the bowl of a food processor. Add 1/4 cup of Swerve and process until a thick paste forms. Taste the mixture for sweetness. If it is not sweet enough for you, add another 1/4 cup of Swerve until the mixture has reached the desired amount of sweetness.
Roll about a teaspoon full of the dough into a ball. Roll immediately in the coconut Swerve mixture. Repeat with the remaining dough.
