I love a rotisserie chicken! I’m talking about the ones that come from the grocery store, Sam’s Club or Costco. My husband has coined them as a Lucky Chicken because everyone is lucky to have dinner that night. Add on a side dish or vegetable and maybe a salad and dinner is BOOM done! I usually buy two at a time. One would be for dinner that night and the other would be for shredding. . I store the shredded chicken in the freezer to use in recipes at a later date. It’s a big-time saver for sure!
