My husband and I are both from Louisiana. This may explain why I include a little bit of spice in my food here and there. Tasty gumbos, seafood dishes and stews make it to our table quite often. Jambalaya is one such dish that is a regular dinnertime option. When I started a Keto diet, I missed the normal dishes with Louisiana flare because most of them require rice as a main ingredient. As I have grown into the Keto lifestyle, I learned about substitutions, such as cauliflower rice and resistant starch rice. I have used cauliflower rice for Jambalaya, but it turns out a little saucier. Resistant starch rice is a much better substitution for Jambalaya. Rice is easy to make ahead and store in the freezer, which is the main idea of resistant starch foods. The starches are released when made ahead of time and will not spike the blood sugar. Resistant starch foods should be used sparingly, so I only allow for it once a week or once every couple of weeks. I can now have my Jambalaya and eat it too!
Ingredients
2 large onions, chopped
3 celery stalks, chopped
2 large green bell peppers, chopped
1 cup butter
1 (16 oz.) can diced tomatoes with the juice
1 can tomato paste
1 small can sliced mushrooms, drained
1 -3/4 cup chicken broth
Salt to taste
Red pepper flakes to taste
1 pound smoked sausage, cut in rounds
2 cups cooked, shredded chicken
1-1/2 lb. shrimp, peeled, deveined and tails removed
1 cup cooked rice
Instructions
In a large pot, saute the celery, onion and bell pepper in butter.
Add the diced tomatoes, tomato paste and mushrooms. Stir to combine. Add the chicken broth, red pepper flakes and salt. Stir until the liquid boils slightly and the tomato paste breaks down.
Add the chicken, shrimp and smoked sausage and stir to combine. Let cook for 4-10 minutes to heat through.
Add the rice or cauliflower rice and stir to combine all ingredients. If using cauliflower rice, you may need to cook until the liquid reduces. If you are using rice, the rice will absorb the liquid more quickly.
Serve immediately. DELICIOUS!
