Sweet Almond Pie Crust

After plenty of trial and error in the kitchen, I’ve finally landed on what I consider the ultimate Keto sweet pie crust. This Sweet Almond Pie Crust is made with almond flour and bakes up with a delicate, buttery texture that’s wonderfully similar to a classic shortbread. It’s lightly sweet, perfectly tender, and an ideal base for all your favorite dessert fillings.

For best results, roll the dough as thin as possible; this is the key to achieving that perfect crisp-yet-melt-in-your-mouth bite. Almond flour can be a bit finicky to work with, especially when it comes to baking. It tends to brown (and even burn) more quickly than traditional flour, so keeping a close eye on it in the oven is essential.

That said, the extra care is absolutely worth it. The flavor and texture are unmatched, making this crust a standout choice for sweet pies and tarts. It has quickly become my go-to recipe whenever I’m creating a dessert that deserves something a little special.

Ingredients

2-1/2 cups almond flour

1/8 cup baking powder

1/2 tsp. salt

1/2 cup granulated Swerve

1-1/2 tsp. Swerve brown sugar

1-1/2 cups butter-flavored shortening

1 egg

1/4 cup ice-cold water

1-1/2 tsp. vanilla extract

Instructions

In the bowl of a mixer, combine the almond flour, baking powder, salt, Swerve granulated and brown sugars, butter-flavored shortening and egg. Mix until thoroughly combined.

Add ice water and vanilla extract. Stir to combine. Turn out the dough onto a piece of plastic wrap and form it into a ball. Wrap in the plastic wrap and place in the refrigerator. Allow to chill for several hours.

Remove from the refrigerator. Roll the crust into a circle. Place the dough in the pie pan and press it up over the edge. At this point, you can flute the edge to make it more aesthetically pleasing, if you want to. Poke the bottom of the pie crust with a fork to prevent bubbling while baking.

Place the crust in the oven and bake for 10-12 minutes. After you bake the crust, you can fill it with whatever filling fits your occasion. If you are baking a hot pie, place aluminum foil or an edge protector around the rim to prevent burning.

I usually make a chocolate crust for my Keto Peanut Butter Pie, but the Sweet Almond Pie Crust pairs perfectly with the shortbread flavor of the peanut butter, making it taste like a Nutter Butter Cookie.

Press the Sweet Almond Pie Crust dough into a small sheet pan to make my Keto Slab Pumpkin Pie. This pie is my go-to when I am craving Fall flavors.

Swap out the pecan or walnut pie shell with a Sweet Almond Pie Crust for my Mocha Fluff Pie. The rich, creamy mocha flavor is a low-carb treat that’s easy to make and full of flavor. 

My Keto Raspberry Pie is one of my favorites and is the most likely choice when I entertain guests. This pie is something that everyone will talk about when they go home.
