In the midst of winter, I think everyone dreams of sitting on a beach somewhere with a fresh ocean breeze blowing through their hair. That picture in my head is complete with some kind of tropical drink in my hand as I soak up the sunshine. Pina Coladas are easy to make and perfect for a fancy glass. Garnish with a straw, wedge of pineapple, a maraschino cherry and a tiki umbrella for added fun!
A Pina Colada is one of the world’s most popular cocktails and is perfect for that picturesque vision in my head. Its creamy consistency and refreshing sweetness are a splendid Spring or Summer beverage on warm days. After all, it was 80 degrees yesterday morning here in Texas; today it is 45 degrees. I think I have a little more dreaming to do!
Ingredients
1-1/2 oz. white rum
1/2 oz. dark rum
1/2 oz. fresh lime juice
1 oz.. coconut cream
1-1/2 oz pineapple juice
1-1/2 cups ice
Garnish: Pineapple wedge
Instructions
Add all ingredients to a blender.
Process until all chunks of ice are gone. YES! It’s that easy! Serve with a slice of kiwi fruit on the side of the glass or float it on the top.

- 1/2 oz. white rum 1/2 oz. fresh lime juice1 oz.. coconut cream
- 1/2 oz. fresh lime juice
- 1 oz. coconut cream
- 1-1/2 oz. pineapple juice
- 1-1/2 cups ice
- Garnish: Pineapple wedge, kiwi fruit slice, or other tropical fruit
Instructions
- Add all ingredients to a blender and process until smooth.
- Garnish with your favorite tropical fruit and a tiki umbrella for fun.
