Meal Prepping for the Week of June 21

Meal Prep Monday turned into Meal Prep Tuesday. I had a friend moving away, and I wanted to see her before she left, so meal prep was pushed back a day. That’s the good thing about meal prepping; it’s flexible. We did not miss any meals because of it. We are good.

Menu Plan

Monday – Leftovers

Tuesday – Marinated chicken, steamed squash, mashed cauliflower

Wednesday Pesto Trout, Lemon and Green Onion Rice, Asparagus

Thursday Beef Fajitas

Friday – Guacamole Burgers, Broccoli Salad

Saturday – Dinner out

Sunday – Grilled Steak, Baked Potato, Broccoli Casserole

Breakfast – Southwest Breakfast Pizza, Pumpkin Pie Smoothies, Gingerbread Waffles

Lunch – Leftovers, Cheesy Cauliflower Soup, hot sandwiches

Snack Cheesecake Parfaits with Berries, Pizza Dip, Tapatia Mixed Nuts from Costco, Spicy Sausage Balls

Thawing

Chicken – Cajun Chicken Sandwiches (freezer meal), chicken for various marinades

Trout – Pesto Trout

Italian Sausage – Sausage Puffs

Ground Beef – Guacamole Burgers

Slice

Squash – Steamed Squash

Cauliflower– Mashed Cauliflower

Prepare

Steam Cauliflower – Mashed Cauliflower

Make mini pizza crusts – Southwest Breakfast Pizza

Make starch-resistant rice – Lemon and Onion Rice

Marinate pork chops – for the freezer

Marinate beef – Beef Fajitas

Make burger patties – Guacamole Burgers

Marinate Chicken – Cajun Chicken Sandwiches, chicken marinades for the freezer

Make remoulade sauce – Cajun Chicken Sandwiches
