We used to live down the street from a Sweet Tomato’s Restaurant with an AMC Theater right across the street. On a night when we planned to go to the movie theater, we would go to Sweet Tomato’s for dinner. My son loved the pizza there. The pizza was decent, believe it or not. My husband and I enjoyed the offerings on the salad bar, including the broccoli salad. Their broccoli salad is delicious, so I tried to recreate it at home many years ago. I think I came close. Unfortunately, the Sweet Tomato’s Broccoli Salad has sugar and dried cranberries in it, so I had to make it Keto to make it at home. I substituted the sugar with granulated Swerve and omitted the dried cranberries. Boom! It’s been Keto-ized!!
Ingredients
1 large head of broccoli, cut into bite-sized florets
3/4 cup mayonnaise (I used Blue Plate)
2 Tbsp. granulated Swerve sweetener or sugar (more to taste)
1 Tbsp. + 1 tsp. white vinegar
(Optional) 2 Tbsp. milk
Salt and pepper to taste
3 Tbsp. sunflower seeds
1/2 red onion, chopped
(optional) /.2 cup dried cranberries or raisins
Instructions
In a small bowl, mix the mayonnaise, vinegar, Swerve or sugar, salt and pepper. If the mixture is thick, add the milk one tablespoon at a time until the desired consistency is reached. The dressing should be a little thicker than a coleslaw dressing. If the dressing seems too thin, add a little more mayonnaise. Whisk together until all ingredients are incorporated and the mixture is smooth. Ensure you taste the dressing and adjust the seasonings before pouring it over the broccoli.

Place the broccoli florets and the red onion in a large bowl.

Pour the dressing over the broccoli and stir until the broccoli is coated. Fold in the sunflower seeds and the dried fruit if using. Stir to coat. Serve alongside burgers, steak or any other main dish meal. I also like it for lunch all by itself. Yum!
