Keto Broccoli Cheese Bake

This was the perfect side dish to go alongside the barbecued beef ribs I made one night. Before it went into the oven, I topped it with some InnoFoods Keto Cracker Crumbs and dotted it with butter. It was a good use for the crumbs because they are a teensy on the expensive side. Everybody likes this one.

Ingredients

1 head broccoli, cut into florets

3 Tbsp. butter

3 Tbsp. flour

2 tsp. salt

2 cups milk

1-1/2 cups cheddar cheese

1 cup white cheddar cheese, divided

4 eggs

Instructions

Blanch the broccoli until crisp and tender. Drain well.

Prepare the cheese sauce. First, make a roux by melting the butter in a frying pan. When the butter is melted, add the flour and whisk until thick. Do not brown the roux, though. Place the milk in the microwave and heat it to warm, which will prevent curdling. Gradually whisk in the milk to the roux. Whisk until smooth. Add the cheese to the milk mixture and stir until melted and combined..

Beat the eggs and add some of the cheese sauce mixture to the eggs to temper them which will prevent the eggs from scrambling. Pour the egg mixture into the cheese sauce.

In a rectangular baking dish, place the steamed broccoli. Evenly pour the cheese sauce mixture over the broccoli evenly. Stir to coat the broccoli.

Sprinkle the top with some cracker crumbs, bread crumbs or sliced almonds. Bake at 350 degrees for 45 minutes.

When the casserole comes out of the oven, the topping should be golden brown. Because of the eggs, this casserole sets up like a breakfast casserole. Make sure that the center of the casserole is set. If it is not, continue to bake in 5-minute intervals until a toothpick or skewer comes out clean from the center. Serve alongside any protein.
