Meal Prep for the Week of December 18

Another busy week with lots of celebrations. I had a small party with my closest girlfriends at the front end of the week, and graduation celebrations for my son who graduated from college. Easy meals were the name of the game this week.

Monday – Party food (Charcuterie, Layered Mexican Dip, Chili, Cornbread, Taco Mini Peppers, Taquitos, Mini tacos)

Tuesday – Tacos and taco salad

Wednesday – BBQ Shrimp and cauliflower grits

Thursday – Chicken with Mushroom Sauce, roasted broccoli with parmesan, salad

Friday Beef Unkebobs with Green Beans and Almonds, Starch Resistant Rice, Salad

Saturday – Vegetable Tortellini Soup

Sunday – Leftovers

Breakfast – Ham and Almond flour biscuits

Lunch – Turkey Club Sandwiches, Tornado Burger, 2 lunches out for graduation celebration

Snack – Leftover party food, Vanilla Chex Mix

Ground Beef – Taco Meat, Taco Mini Peppers, Mini Tacos, Beef Unkebobs with Green Beans and Almonds

Shrimp – BBQ Shrimp

Bone-in Chicken Breast – Chicken in Mushroom Sauce

Ham – Ham and Almond Flour Biscuits

Bacon – Turkey Club Sandwiches

Turkey Lunchmeat – Turkey Club Sandwiches

Mushrooms – Chicken with Mushroom Sauce

Celery – Vegetable Tortellini Soup

Trim Green Beans – Beef KUnkebobs with Green Beans and Almonds

Cook Bacon – Turkey Club Sandwiches

Make Starch Resistant Rice to serve with Beef Unkebobs with Green Beans and Almonds

Layered Mexican Dip

Chili

Taco meat

Almond Flour Biscuits

Vanilla Chex Mix

Food Preservation and Kitchen Tasks

Deep-cleaned a refrigerator

Prepared dishes and glassware for a party

Freeze Dried Mini Marshmallows
