I am jumping off my Keto and low-carb bandwagon today, to share my Layered Mexican Dip. You could leave out the beans to keep it Keto, but what is the fun in that? This dip is a favorite at parties and potlucks. Don’t get me started about serving this to teenagers! You might want to make a double batch because teenagers will scarf this down in seconds!
Since the holidays are just around the corner, it is time to start thinking about all the wonderful food that comes with them. Layered Mexican Dip is easy to make with ingredients you probably have on your pantry shelves already. Anything that comes together in minutes and looks pretty in a clear glass dish is definitely a winner!-. This dip is a guaranteed crowd-pleaser!
Ingredients
1 can refried beans
1-2 cans chopped green chilies
1 cup sour cream
1 cup guacamole
1-2 cups cheddar cheese
Instructions
In the bottom of a glass dish, spread the refried beans. The next layer is the guacamole. Spread that generously over the beans. You can use homemade guac or store-bought.
Top the guacamole with the sour cream and chopped green chiles and spread it out to the sides. You can use regular or dairy-free to accommodate your family or guests. Spoon the chopped green chiles over the sour cream and spread out to the sides of the dish.
For the last layer, sprinkle the top generously with cheddar cheese. Again, you can use regular cheese or dairy-free. This dip is meant to be served cold.
It is delicious with veggie dippers or tortilla chips. This Mexican Layered Dip is a favorite at gatherings.
