Butterfinger Cookies

I just returned from a much-needed vacation, and when I’m away, I tend to give myself a little grace and loosen up on my usual low-carb routine. I don’t go completely off the rails, but I definitely take a few delicious detours. Case in point: these Butterfinger Cookies.

Let me tell you, they are so worth it.

I use Butterfinger Bits, which are an absolute game-changer. If you remember the old days, you’d have to take a mallet to full-sized Butterfinger bars to get that perfect crunch (a great stress reliever, admittedly—but not the most efficient method). Thankfully, times have changed, and so has my cookie game.

The result? Sweet, crunchy, peanut-buttery perfection in every bite. These cookies are ridiculously good—crisp on the edges, soft cookie texture, chewy from the candy and packed with that iconic Butterfinger flavor. If you’re looking for a treat that justifies a little indulgence, this is it.

1-3/4 cups flour

3/4 tsp. baking soda

1/4 tsp. salt

3/4 cup sugar

1/2 cup butter, softened

1 large egg

1 bag Butterfinger bits or 10 snack size butterfinger bars or 3 regular sized butterfinger bars, chopped

Preheat oven to 375 degrees. Combine flour, baking soda and salt in a bowl and set aside.

With an electric mixer, beat sugar and butter until creamy. Beat in egg until just combined.

Gradually beat in flour mixture. Stir in Butterfinger Bits or smashed Butterfinger candy bars. Mix well. The dough will be very thick.

Drop by teaspoonfuls onto an ungreased baking sheet lined with parchment paper. For a nice round cookie, you can roll the dough into balls.

Bake for 10-12 minutes or until lightly browned. Cool completely and enjoy!

  • Bake for 10-12 minutes or until lightly browned.
  • Cool completely.
