Keto Sesame Italian Butter Cookies

Butter cookies are an easy-to-make Keto treat, so I have kicked it up a notch by using my tried and true butter cookie recipe with an Italian flare. These cookies pair well with a cup of coffee or hot chocolate. The sesame seeds give these cookies a slight crunch on the outside, but they are soft inside, making the perfect cookie.

Ingredients

2 cups almond flour

1 stick salted butter, room temperature

1/2 cup granulated Swerve (use more for a sweeter cookie)

1 egg

1-1/2 tsp. vanilla extract

1/8 tsp xanthum gum

1/4 tsp. salt

1/4 cup white sesame seeds

1/4 cup black sesame seeds (if black sesame seeds are unavailable, substitute another 1/4 cup white sesame seeds.)

Instructions

Heat the oven to 350 degrees. In the bowl of an electric mixer, combine the almond flour, xanthum gum, salt and Swerve. Mix.

Add the butter, egg, and vanilla. Mix well until the dough comes together.

In a small bowl, combine the black and white sesame seeds.

Roll the dough into balls, about 1 tablespoon each. Place on a greased cookie sheet.

Roll the cookie balls in the sesame seeds and return to the baking sheet.

Bake for about 10 minutes. The black sesame seeds stand out for a pretty cookie. Enjoy!
