Ingredients
2 Tbsp. extra virgin olive oil
3 cloves garlic, minced
1 onion, chopped
Any fresh, frozen or canned vegetables on hand
2 cans diced tomatoes
1 head cabbage, chopped
1 large can tomato juice
2 32-oz cartons vegetable broth
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil. Add the onions and garlic. Saute for about 3 minutes.

Add the cabbage, diced tomatoes and other vegetables. If you are using canned vegetables, drain the liquid first. Cook and stir about 3 minutes.



Pour in the tomato juice and vegetable broth. Add salt and pepper to taste. Stir.


Heat to a boil, then turn down the heat. You can keep this soup warm on the stove all day for easy access. Store leftovers in the refrigerator.
