Meatloaf is a classic American comfort food, but sometimes it’s fun to put a new spin on an old favorite. This Italian-style meatloaf brings bold, delicious flavor to the table, complemented by a savory red sauce and a sprinkle of Parmesan cheese on top. One bite, and your family will be saying “Mamma Mia!” all night long. And don’t forget about the leftovers — they make the most incredible Italian Meatloaf Sandwiches the next day. Trust me, you’ll want to make extra!
Ingredients
2 Tbsp. extra virgin olive oil
1 red pepper, diced
1 onion, diced
2 tsp. chopped garlic
1 lb. ground beef
2 eggs
1/4 cup breadcrumbs (I made Keto breadcrumbs)
1 cup Parmesan, plus extra for garnish
1 Tbsp. Worcestershire
1 Tbsp. balsamic vinegar
1/4 cup basil, chopped
1/4 cup parsley, chopped
2 tsp. salt
1/2 tsp. pepper
1 cup marinara sauce
Instructions
Preheat oven to 350 degrees. Heat olive oil in a saucepan. Saute peppers, onions and garlic until soft. Remove to a plate and allow to cool.

In a large bowl, combine the remaining ingredients, except for the sauce. Add the vegetables and mix well.


Pack the meat mixture into a loaf pan. Invert the meatloaf into a greased baking dish.

Top with the marinara sauce.

Bake for 50-60 minutes, or until a meat thermometer registers 160°F (71 °C).

Remove the dish from the oven and allow it to rest for 5-10 minutes. Sprinkle with Parmesan cheese and slice to serve. Mama Mia!!
