If you happen to spot keto-friendly bagels at the grocery store, don’t hesitate—grab them! My love for bagels goes back to my freshman year of college, when I needed quick, satisfying lunches between classes. There was a small snack bar on campus that served toasted bagels slathered with cream cheese and butter. At the time, I had never heard of such a combination and felt completely out of my element, but one bite was all it took. I was hooked. Those bagels may have even contributed to the infamous “Freshman 15!”

These days, following a keto lifestyle, the cream cheese and butter aren’t the challenge; it’s finding a good low-carb bagel. Keto bagels can be surprisingly hard to come by, which is why I was thrilled when I stumbled across them at Aldi. I’ll admit, I was skeptical at first, but they turned out to be genuinely delicious. Knowing Aldi’s “here today, gone tomorrow” reputation, I quickly stocked up. Now I can enjoy that nostalgic toasted bagel experience again, and it feels like such a treat. I now know that the Sola brand also has a bagel line that includes plain, blueberry and onion flavors. YUM!

Of course, bagels aren’t just for breakfast. They make the perfect base for quick and easy keto pizza bagels, too. Simply add your favorite toppings to suit your taste. In this version, I lean toward a classic supreme-style combination, hearty, flavorful, and perfect for a fast, satisfying lunch or casual dinner.

Ingredients

1 Keto pizza bagel (or whatever kind of bagel you like. It doesn’t have to be Keto if you do not need a Keto bagel)

1/2 cup pizza sauce

1/2 cup mozzarella cheese

Parmesan cheese

1/2 cup black olives, sliced

3-4 button mushrooms, sliced

1/4 green pepper, chopped

1/4 onion, chopped

Crushed red pepper flakes

Instructions

If you want the bagel crunchy, toast it in a toaster; otherwise, place the two bagel halves on a baking sheet sprayed with cooking spray.

Spread the pizza sauce over the bagels.

Top with your favorite pizza toppings. I used black olives, green pepper, mushrooms and onion. You could also use pepperoni, sausage, green olives, artichokes, or whatever floats your boat. The sky is the limit here!

Top with mozzarella cheese.

Bake in the oven for about 15 minutes or until the cheese melts. This is a super fast lunch especially if you have all the toppings chopped up and ready to go beforehand.

You can make this bagel pizza differently every single time by using different toppings and cheese. This little pizza is perfect for lunch or a snack.

  • If you want the bagel a little more on the crunchy side, toast it in a toaster before topping it; otherwise, place the two bagel halves on a baking sheet sprayed with cooking spray.
  • Spread the pizza sauce over the bagels.
  • Top with your favorite pizza toppings. I used black olives, green pepper, mushrooms and onion.
  • Top with mozzarella cheese.
  • Bake in the oven for about 15 minutes or until the cheese melts. T
