No Bake Keto Cookies

I never thought we would ever eat cereal again on a Keto diet, but lo and behold, a couple of stores are offering Keto cereal! I can’t believe it!

I first found a Keto cereal at Costco called Catalina Crunch. Of course, at Costco, it comes in a big bag of the Cinnamon Toast flavor. After that, Sprouts introduced the Catalina Crunch in a smaller bag, but they come in a variety of flavors: Cinnamon Crunch, Fruity, Chocolate, Peanut Butter, Maple Waffle, Honey Graham, Mint Chocolate Chip and Chocolate Banana. The big bag at Costco is a better deal than the smaller bags at Sprouts, but Sprouts has more flavors. Surprisingly, Walmart has introduced a Keto friendly cereal by Wonderworks in a chocolate flavor and a peanut butter flavor.

I have tried most of the Catalina Crunch flavors and the peanut butter Wonderworks flavors. So far, I like them all. The Catalina Crunch cereal is a flat cereal that is very similar to the Golden Grahams cereal. The Wonderworks cereal is round, much like Trix. I thought that the Catalina Crunch Chocolate cereal would be a good candidate for some no-bake cookies. This was a huge experiment, but they turned out great. I may experiment with other flavors.

Ingredients

2 cups Catalina Crunch Chocolate Cereal

1 bag Lily’s Butterscotch Baking Chips

1 bag Lily’s Dark Chocolate Baking Chips

1 cup unsweetened coconut

(Optional) 1/2 cup unsalted peanuts

Instructions

Place the butterscotch and chocolate chips in a large microwave-safe bowl. Microwave the chips in 20-second intervals, stirring between each interval until the mixture is smooth.

Add the coconut and cereal to the chocolate mixture and stir to coat. If you are using peanuts, add them, too. Make sure that all the cereal is coated well. Drop by teaspoonfuls onto a cookie sheet lined with parchment paper. Place the cookie sheet in the refrigerator to set up.

I think in hindsight, I would have made the cookies smaller, but other than that, these were delicious. Store them in the refrigerator in a plastic storage bag or sealed container to maintain freshness.
