Keto Fudge? Yes, Ma’am!

Worth it! Worth it! Worth it! All I can say is make this fudge! Keto or not, it is so wonderful! Make sure to make it ahead because it needs to set up. One little wonderful square is all anyone needs to experience chocolate deliciousness!

Ingredients

2 cups heavy whipping cream

2/3 cup powdered monk fruit sweetener

2 Tbsp. butter

2 tsp. vanilla

2 cups Lily’s chocolate chips or another brand of sugar-free chocolate chips

(Optional) Pinch of cinnamon

(Optional) Any kind of nuts: pecans, walnuts, pistachios, etc.

This fudge requires you to make your own sweetened condensed milk. OK…that sounds difficult, but it is not; in fact, I may never buy canned sweetened condensed milk again. When this is on the stove, it caramelizes, filling my house with the best scent of caramel. To make your own sweetened condensed milk, add the heavy cream, powdered monk fruit sweetener, butter and vanilla in a saucepan or a skillet like I did. Stir for about 15-20 minutes, until a little browned and smells like caramel.

Remove from heat and cool for about 20 minutes. Pour in your chocolate chips and stir until melted. Add the cinnamon and stir until combined. At this point, you can add nuts if you choose to include them. Stir until combined. Pour the fudge mixture into a loaf pan lined with parchment paper.

Place the fudge in the refrigerator to chill and set up. I know it’s hard, but if you can stand it, let it chill overnight. The temptation is real to take it out before it is ready. Resist! Resist! Resist! You won’t be sorry! The fudge is best when well chilled.

Take it out from the refrigerator and remove the fudge by lifting it out using the parchment paper. The parchment paper easily peels away from the fudge. Once you have peeled away the parchment paper, place the parchment paper on a cutting board and place the fudge block on top of the parchment paper. Cut the fudge into small squares using a sharp knife. I like smaller squares because a little goes a long way. Store your fudge in the refrigerator. Keto fudge doesn’t last long in my house, so if you are like me, you may want to set some of the fudge squares aside for yourself in a place where they cannot be found. The others in your household will eat it ALL if you do not!
