Fiesta Salad is a vibrant, refreshing dish that is perfect for any occasion. Packed with crisp, colorful veggies and tossed in a simple yet flavorful dressing, it’s as delicious as it is eye-catching. 2 ripe avocados

3 tomatoes

1/2 onion, sliced

2 Tbsp. cilantro, chopped

2 limes, halved

Coarse salt, to taste

Black pepper to taste

Extra virgin olive oil

Cut the avocados in half. Remove the pit and carefully scoop out the avocado halves. Cut avocados into wedges and pile them in the center of a large platter.

Seed and wedge the tomatoes and arrange around the avocados.

Arrange the sliced onion over the platter and sprinkle cilantro over all the vegetables.

Squeeze the juice of 2 limes evenly over the vegetables.

Season with salt and pepper and drizzle with olive oil. BOOM DONE!
