Cheesy Zucchini Rounds – Low-Carb and Keto Friendly

Cheesy Zucchini Rounds are one of my favorite ways to turn fresh zucchini into a crave-worthy snack or easy side dish. I most often enjoy these baked zucchini chips straight from the oven as a savory snack, but they’re also the perfect low-carb side to serve with burgers, barbecue, or brisket.

Baked until tender on the inside and lightly crisp on the edges, this cheesy zucchini recipe is loaded with flavor. Each round is topped with Parmesan cheese and a blend of herbs, creating a simple yet satisfying dish that fits perfectly into a low-carb or keto lifestyle. Whether you’re looking for a quick appetizer, a healthy snack, or a flavorful vegetable side, these oven-baked Cheesy Zucchini Rounds deliver every time.

Ingredients

2 large zucchini, sliced into 1/8″ rounds

2-3 Tbsp. olive oil

2/3 cup shredded Parmesan cheese

1 tsp. oregano

1/2 tsp. garlic powder

1/2 tsp. salt

1/8 tsp. pepper

1/2 tsp. paprika

Instructions

In a bowl, toss the zucchini with olive oil.

In a separate small bowl, combine the Parmesan, oregano, garlic powder, salt, pepper and paprika. Stir.

Spread the zucchini in a single layer on a greased baking sheet. Sprinkle the spice mixture over the zucchini and stir until evenly coated.

Bake in the oven at 350 degrees for 20 minutes. The zucchini rounds pair well with a burger in the place of fries.
