As Spring turns into summer, zucchini starts showing up in full force. Zucchini ends up on my table in many forms, and this Zucchini Gratin is a favorite. This cheesy side dish pairs well with any protein to complete a meal and is quick to prepare.
Ingredients
6 Tbsp. butter + more for topping
1 lb. yellow onions, ct in 1.2 and sliced
2 lbs. zucchini (roughly about 4 zucchini), sliced 1/4″ thick
2 tsp. salt
1 tsp. pepper
1/4 tsp. ground nutmeg
2 Tbsp. flour
1 cup hot milk
3/4 cup breadcrumbs
3/4 cup Gruyere cheese, grated
Instructions
Preheat oven to 400 degrees. Melt the butter in a large frying pan and cook onions for 20 minutes until tender but not brown.
Add zucchini. Cover and cook for 10 minutes.
Add salt, pepper and nutmeg. Cook uncovered for 5 minutes. Stir in flour.
Add the hot milk and cook over low heat for a few minutes until it makes a sauce. Pour into an 8×10 baking dish.
Combine the breadcrumbs and Gruyere cheese. Sprinkle on top of the zucchini mixture. Dot with butter.
Bake 20 minutes or until bubbly and brown.
