Start Your Morning Off Right with Some Breakfast Taquitos

Make these ahead at the beginning of the week for a fast and easy breakfast. Keep them in a resealable storage bag, so you can grab one and put it in the air fryer or oven while you get ready to go in the morning. Top it with some sour cream and salsa to eat at the kitchen table or eat in the car. Either way, it’s a good way to start the day.

6 eggs, beaten

1 package breakfast sausage links

1 bag cheddar cheese

Salt and pepper to taste

Flour tortillas

Toppings: Salsa and sour cream

Lay out a couple of tortillas on a sheet pan. Place some cheese down the center of the tortilla. I had several kinds of cheese on this day. I used some smoked gouda on some and some cheddar on the other/

Top with scrambled eggs.

Place the sausages in the center of the tortilla. I used two sausages. Roll up the taquitos and place on another baking sheet. .

Place the taquitos in the freezer to freeze for a couple of hours. When the taquitos are frozen, transfer them to a resealable plastic bag and store them in the freezer.

To reheat the taquitos, place in the air fryer or oven. If using an air fryer, set the air fryer to 350 degrees for 5 minutes. If using an oven, wrap the taquito in aluminum foil and cook at 350 degrees for 20 minutes until heated through. The result is a crispy and flavorful breakfast.
