These sausages are so good! This recipe is made with the precooked chicken sausages found at Costco. The sausages come in such a big bag that I will put some away in the freezer. You could also make these using cocktail smokies or hot dogs cut in half for a traditional pig in a blanket. I made these using fathead dough to maintain our keto diet; however, you can certainly use your favorite pizza dough or a can of crescent roll dough.

Crescent roll dough or fathead dough (I had to make 3 batches of fathead dough to use up the big bag of Costco sausages): 3/4 block cream cheese, 1 1/2 cups shredded mozzarella, 1 1/2 cups almond flour, 1 Tbsp Psyllium husk powder, 1 tsp. baking powder, 1 tsp. xanthum gum, 1 egg

For the fathead dough, cube the cream cheese. Place your mozzarella cheese and cream cheese cubes in a microwave-safe bowl. microwave in 20-second intervals until the mixture combines when stirred (usually takes 3-4 20-second intervals to melt). Add the almond flour, psyllium husk powder, baking powder, xanthum gum and egg. By the time you add the egg, the cheese mixture should be cooled enough to keep the egg from scrambling. Knead the dough until well combined until you can form a ball. If the dough seems too sticky, add some more almond flour a tablespoon at a time until it seems more smooth.
Spray your rolling pin with cooking spray. On a large sheet of parchment paper, roll the ball of dough into a perfect circle. Roll the dough as thin as you can get it. The edges will not want to form a perfect circle, so smooth and pat the edges to form a circle. With a pizza cutter or a knife, cut the dough circle into triangles, like you would a pie but with twice as many slices. If you are using crescent roll dough, all you have to do is separate the triangles along the serrated edges.
Starting at the edge of the triangle, place a sausage and roll it up in the dough triangle.
Place the rolled-up sausages on a cookie sheet sprayed with cooking spray. Sprinkle generously with Everything But the Bagel seasoning, pressing the seasoning into the dough. Bake in a 350-degree oven for about 30 minutes or until browned on the top. You can keep these in the freezer in a freezer bag, but make sure you eat some before you put them in the freezer because these are delicious!
