Time has not been my friend so far this week. The lack of time and appointments scheduled on my meal prep days has thrown my off my meal prep schedule. Meal prepping has so far been too random. This week is shaping up to be a very busy week with appointments and jury duty, but I have reserved a meal prep day because it is going to save me and my family.

The Menu

Monday – Hamburgers and Keto Fried Eggplant

Tuesday Fried Garlic Chicken Thighs, salad and cauli mac

Wednesday Small batch shrimp boil

Thursday – Leftovers

Friday Spicy Asian Steak Lettuce Wraps

Saturday Rio Grande Quesadillas, White Queso Dip

Sunday – Italian meatballs from the freezer, salad, broccoli, starch resistant pasta

Breakfast Fried Egg Sandwiches

Lunches Spicy Seafood Bisque

Snacks White Queso Dip with veggies and Keto crackers, Roasted Cocktail Nuts

Thawing

Steak – Asian Lettuce Warps

Shrimp – Spicy Shrimp Bisque

Ground beef – Hamburgers

Shredded chicken – Rio Grande Quesadillas

Bacon – Bacon and Egg Sandwiches

Chicken thighs – Garlic Parmesan Fried Chicken Thighs

Onion – Spicy Shrimp Bisque

Celery – Spicy Shrimp Bisque

Green onion – Spicy Shrimp Bisque, Rio Grande Quesadillas
