Fried Egg Sandwich

A supermarket in Houston, Central Market, has a sandwich counter where customers can build a custom sandwich. With a variety of bread, meats, cheeses, vegetables, condiments and whatever else they offer at the time., no two sandwiches are alike. The combinations are endless!

I channeled my inner Central Market sandwich counter for this Fried Egg Sandwich. My son loves a good sandwich and has been known to make a killer sandwich, but even he raised an eyebrow at this one. In the end, the Sandwich King in my house liked it! It’s all good, though! Really good!

Ingredients

6 slices bread, toasted

1 package of Hollandaise sauce mix, made according to package directions, or make homemade

1 tsp. fresh lemon juice

Sun-dried tomatoes

3 eggs

Pickled onion or plain red onion, sliced

Ham or turkey slices

Fresh arugula or baby spinach

Instructions

Prepare the Hollandaise sauce according to the package directions. Add the juice of half a lemon and stir to combine. Alternatively, you could make the hollandaise sauce from scratch.

Fry 3 eggs to your liking. Some people like the egg yolk on the runny side. I like it that way, but the rest of my family prefers the yolk more solid. Because of these preferences, I fry each egg individually. Set the fried eggs aside.

Toast six slices of bread. Lay out the bread slices on a baking sheet for easier assembly.

Place a slice of cheese on each slice of bread. Then top three slices of bread with the pickled red onions and sun-dried tomatoes. If you don’t have any pickled red onions, you can use plain red onions.

Place some sliced turkey meat on top of the cheese. Then place the fried egg on top of the turkey.

Spoon some hollandaise sauce over the egg. At this point, you can wrap the sandwich in aluminum foil and place it in a 250-degree oven for at least 20 minutes to melt the cheese and keep it warm until ready to serve

When ready to eat, remove the Fried Egg Sandwich from the oven and unwrap it. Remove one bread slice from the hollandaise side of the sandwich and top with fresh arugula. Replace the bread on top of the arugula. This sandwich is so good and goes beyond the same old same old sandwich you might eat for lunch.
