At Central Market in Houston, there’s a magical sandwich counter where you can build your own masterpiece—bread, meats, cheeses, veggies, condiments—anything goes. With endless combinations, no two sandwiches ever taste the same.
That’s the spirit I brought into my kitchen for this Fried Egg Sandwich. My son, a self-proclaimed Sandwich King, is known for crafting legendary creations, but even he raised an eyebrow when he saw this one coming together. One bite later, though, he was hooked. Verdict? It’s all good… really, really good.
Ingredients
6 slices bread, toasted
1 package of Hollandaise sauce mix, made according to package directions, or make homemade
1 tsp. fresh lemon juice
Sun-dried tomatoes
3 eggs
Pickled onion or plain red onion, sliced
Ham or turkey slices
Fresh arugula or baby spinach
Instructions
Prepare the Hollandaise sauce according to the package directions. Add the juice of half a lemon and stir until well combined. Alternatively, you could make the hollandaise sauce from scratch.

Fry 3 eggs to your liking. Some people like the egg yolk on the runny side. I like it that way, but the rest of my family prefers the yolk to be more solid. Due to these preferences, I fry each egg separately. Set the fried eggs aside.

Toast six slices of bread. Lay out the bread slices on a baking sheet for easier assembly.

Place a slice of cheese on each slice of bread. Then top the three slices of bread with the pickled red onions and sun-dried tomatoes. If you don’t have pickled red onions, you can use plain red onions instead.

Place some sliced turkey meat on top of the cheese. Then place the fried egg on top of the turkey.

Spoon some hollandaise sauce over the egg. At this point, you can wrap the sandwich in aluminum foil and place it in a 250-degree oven for at least 20 minutes to melt the cheese and keep it warm until ready to serve

When ready to eat, remove the Fried Egg Sandwich from the oven and unwrap it. Remove one bread slice from the hollandaise side of the sandwich and top with fresh arugula. Replace the bread on top of the arugula. This sandwich is exceptionally good and goes beyond the typical lunchtime sandwich.
