Baked Avocado Eggs

Sometimes, breakfast reinvents the wheel over and over again. I must have some variety in order to eat breakfast. This Baked Avocado Egg recipe is easy to prepare and tricks my brain into thinking I am getting something different. Trickery or not, these eggs are delish!

3 avocados

6 small eggs

Salt and pepper to taste

Red pepper flakes and fresh herbs for serving

Preheat the oven to 425 degrees. Spray a muffin tin with cooking spray. Cut the avocados in half and remove the pit.

Scoop out some of the avocado meat to make room for the egg. You will have to remove more than you think. Dip the avocado in lemon juice along with the scooped-out avocado meat. We are not going to waste any part of the avocado.

Season the avocado with salt and pepper. Place the scooped out avocado in the bottom of each muffin. Place an avocado on top of the avocado meat and press down slightly to stabilize the avocado.

Crack on egg into each avocado cavity. Season with salt and pepper. Bake for 15 minutes or until the egg whites are set.

Sprinkle with more salt and pepper, red pepper flakes or fresh herbs before serving.
