Simple Side Dish: Garlic Butter Broccoli

If we don’t have cauliflower, we probably have broccoli. Broccoli is probably the second most eaten vegetable in our house. It is one of the only vegetables my picky eater enjoys. Did you know that broccoli is in the cabbage family? Broccoli is a rich source of Vitamins C and K. It can be prepared in many ways. One way I like it is simply with a garlic butter sauce. This simple recipe pairs well with many main meals.

2 head broccoli, cut in florets

2 Tbsp. garlic

1 stick butter, melted

Salt and Pepper to taste

1 Tbsp. lemon juice

Blanch the broccoli in a pot of boiling water for 4-5 minutes.

While the broccoli is blanching, Melt the butter in a microwave-safe bowl,

Add the garlic. lemon juice, salt and pepper. You can use fresh lemon as an alternative. Fresh is always best, but I am out of fresh lemons today. Bottled will do fine in this recipe if that is what you have. Stir to combine.

When the broccoli is done blanching, remove it with a slotted spoon and transfer it to a baking dish.

Immediately toss with the butter and garlic mixture. Serve immediately.

Ingredients
