Finding fresh ideas for the same old same old veggies can be challenging. We like variety around here, so changing up the veggie lineup sometimes takes some creativity. Roasting broccoli already brings out a nutty flavor, so adding some nuts seemed like a logical idea. Roasted Broccoli with Buttered Pecans is an easy side dish that elevates the ordinary. It cooks in the oven while preparing the rest of the meal.
Ingredients
1 large head of broccoli, cut into florets
Olive oil
1 stick butter, melted
1 cup pecans, chopped
Salt and pepper to taste
Instructions
Place the broccoli on a baking sheet. Coat the broccoli with olive oil, salt, and pepper. Bake for 15-20 minutes at 400 degrees.
In the meantime, place the pecans on a baking sheet or in a dry frying pan. If using a baking sheet, roast in the oven for 10 minutes at 350 degrees. If using a frying pan, stir the pecans until they are fragrant. Keep an eye on them because they can burn quickly. Remove and set aside.
Melt the butter in the microwave. Add the pecans to the butter and stir until the pecans are coated.
After the timer for the broccoli sounds, remove the broccoli from the oven and pour the buttered pecans over the broccoli. Place the broccoli back in the oven for 8-10 minutes. Serve immediately.
