If you’re looking for a bold, indulgent side dish, these Cheesy and Smoky Chipotle Fries absolutely deliver. Loaded with melty cheese and topped with a rich, smoky chipotle sauce, they’re the kind of treat that turns any meal into something a little more special. While they’re a fun way to celebrate Cinco de Mayo, they’re just as irresistible any day you’re craving something comforting and a little over the top.

These fries are perfect for those moments when you want to relax your routine and enjoy something truly satisfying. Whether you’re firing up the grill, hosting a casual get-together, or kicking back on a beach vacation with family, they make an easy, crowd-pleasing side.

What really makes them stand out is the flavor combination. The smoky heat from the chipotle sauce pairs perfectly with the creamy, tangy sour cream topping, all layered over crispy fries and gooey, melted cheese. Every bite is rich, a little spicy, and completely addictive, which is exactly the kind of dish you’ll find yourself making again and again.

For the Topping:

1 cup cilantro, chopped

1 clove garlic, minced

1 lime, zested and juiced

1 cup sour Cream

2 Tbsp. Cotija cheese or grated Parmesan

1 tsp. smoked paprika

For the Fries:

1 Tbsp. extra virgin olive oil

1 red onion, chopped

3 cloves garlic, minced

1/2 cup chipotles in adobo sauce, chopped

12 oz. straight-cut French fries

Salt to taste

2 cups Monterey Jack cheese

Cilantro, for garnish

Heat the oven to 450 degrees.

Make the topping first by mixing all the topping ingredients in a medium bowl.

In a skillet, heat the olive oil. Sauté the red onion and garlic for 4 minutes, stirring constantly to prevent burning.

Add the French fries and sprinkle with the smoked paprika. Toss to coat.

Place the fries on a baking sheet coated with cooking spray. Spread the fries in a single layer. Bake for 15 minutes. Flip the fries over and bake another 15 minutes. Remove from the oven and sprinkle 1/2 of the sour cream topping and all of the cheese. Bake another 5 minutes until the cheese melts.

Spoon the remaining sour cream topping over the top, along with some extra chipotle sauce. Garnish with cilantro. If you feel you need more sour cream topping, you can make extra for serving. It’s so good!
