These Keto Cheesecake Parfaits are one of my favorite make-ahead treats because they’re as practical as they are delicious. I like to prepare a batch of six at a time, which gives everyone in the house a couple to enjoy throughout the week. They’re perfectly portioned and ready whenever you need a quick breakfast, snack, or even a light dessert.
One of the best things about these parfaits is how customizable they are. You can switch up the toppings based on what you’re craving or what you have on hand: fresh berries, crunchy nuts, low-carb granola, or even a few sweet treats for a little indulgence. Each layer adds a different texture and flavor, making every cup feel a little special.
For easy storage, I like to use clear plastic punch cups or parfait cups, found at The Dollar Tree, and cover them with Press ‘n Seal wrap, which makes them simple to grab and go. Just cover them well and keep them in the refrigerator, and they’ll stay fresh for a little over a week. It’s an effortless way to have something creamy, satisfying, and keto-friendly ready whenever hunger hits.
Ingredients
1 32-ounce container plain greek yogurt
2 Tbsp. or more vanilla, to taste
Powdered monk fruit sweetener, to taste (or other sweetener, to taste)
1 block cream cheese, softened
Assorted fruit or granola or both
Instructions
In the bowl of a mixer, combine the yogurt, vanilla and powdered monk fruit sweetener. Taste for sweetness. Add more monk fruit sweetener until it is the desired sweetness. Tasting is important for this step

.Add the softened cream cheese to the yogurt mixture and mix until smooth.

Layer the cheesecake mixture in some small cups. I use plastic punch cups in a package of 8-10 from Dollar Tree. Place a little bit of the cheesecake mixture in the bottom of the cup. Cover with fruit. I use Keto-friendly fruit, such as blueberries, raspberries and strawberries, but you can use whatever type fruit your family likes. Place some more of the cheesecake mixture on top of the berries. Add another sprinkling of berries on top.

I cover these with Press N’ Seal and store them in the refrigerator. Before serving, remove the Press N’ Seal and add granola or nuts for a little extra crunch. You can find many yummy Keto-friendly granolas in the grocery stores. These Cheesecake Parfaits are great for breakfast or for a snack.
