When a sweet craving strikes and I want something homemade fast, these 3-Ingredient Keto Peanut Butter Cookies are my go-to recipe. I almost always have the ingredients on hand, which means I can whip up a batch without making a special trip to the store. Even better, they come together in minutes, making them perfect for those times when I want a quick treat without spending a lot of time in the kitchen.
The rich peanut butter flavor and soft, chewy texture make these cookies feel like a real indulgence, even though they’re made with just three simple ingredients. In fact, I sometimes think they should be called “Almost Instant Gratification Cookies” because they’re so easy to make and satisfy a sweet tooth so quickly. Whether you’re following a Keto lifestyle or simply looking for a simple homemade dessert, these cookies are proof that delicious doesn’t have to be complicated.
Ingredients
2 cups peanut butter (Creamy or Crunchy)
2 eggs
2 cups monk fruit sweetener or Swerve
Instructions
Preheat the oven to 350 degrees. Mix all the ingredients until smooth. If you are using monk fruit sweetener, taste the batter at this point to see if you need to adjust the amount of sweetener. In most cases, I do not think that monk fruit sweetener is that sweet, so I always add more until it is sweet enough for my taste.

Pour some sweetener into a bowl. Roll the cookie dough into balls, then roll them in the sweetener to coat. Place them on a cookie sheet a few inches apart. They will not spread much. Bake for 10-12 minutes.

Spray the tines of a fork with some cooking spray. When you take them out of the oven, press a criss-cross pattern on the top of the cookies.

Let them cool completely before transferring the cookies to a platter.
