If you think green beans are just another ordinary side dish, this recipe is about to change your mind. Roasting fresh green beans in the oven brings out their natural sweetness and creates a lightly caramelized, nutty flavor that’s hard to achieve with other cooking methods. The result is tender-crisp green beans with deliciously browned edges that are packed with flavor.
While roasted green beans are wonderful on their own, adding a few simple ingredients can transform them into something truly irresistible. This recipe combines savory garlic with melty cheese to create a side dish that’s both comforting and full of bold flavor. It’s an easy way to elevate everyday green beans without adding much extra time in the kitchen.
Whether you’re serving chicken, steak, pork, seafood, or your favorite holiday meal, these Cheesy Garlic Green Beans pair beautifully with just about any main course. Quick enough for busy weeknights and impressive enough for special occasions, this simple side dish is one you’ll find yourself making again and again.
Ingredients
1 lb. fresh green beans, trimmed
1/2 cup Extra virgin olive oil
salt and pepper to taste
2 Tbsp. garlic, minced
1 cup Colby Jack cheese, shredded
2 Tbsp. shredded Parmesan cheese
Instructions
Preheat the oven to 425 degrees. In an 8×8 baking dish sprayed with cooking spray, place the green beans in a single layer. In a small bowl, mix the olive oil and garlic. If you feel you want to use more garlic than 2 Tbsp., I am not against that. The more the merrier!

Pour the olive oil mixture over the green beans and sprinkle with salt and pepper. Toss to coat.

Sprinkle the Colby Jack cheese over the green beans; then, sprinkle the shredded Parmesan on top of that. Bake in the oven for 20 minutes. Serve and enjoy the cheesy goodness!
