Mocha Fluff

Mocha Fluff came to life during a spontaneous craving, and in the most unlikely of kitchens. I was visiting my son at his charming little efficiency apartment, which, while cozy and functional for him, provided only the bare essentials for the kitchen. With minimal storage and a strict Keto pantry, I had to get creative.

As my sweet tooth kicked into high gear, I started improvising with the few ingredients on hand. What came together was a rich, creamy mocha-flavored treat that’s low in carbs but full of flavor. It’s one of those delightful moments where having less actually led to so much more, proof that even the simplest ingredients can make something truly indulgent.

Ingredients

1 cup brown sugar Swerve

1 cup chopped pecans

2 Tbsp. cocoa powder

1/2 dup unsweetened coconut

2 Tbsp. prepared cold coffee

1 container Truwhip Keto whipped topping (get another container if you want to garnish with more topping)

Instructions

In a large bowl, place the contents of the whipped topping container.

Add the cocoa, coffee, pecans, and brown sugar Swerve. Gently fold into the whipped topping. Chill for at least 30 minutes.

Spoon some of the mocha mixture into the bottom of a glass or cup. Sprinkle the top with some coconut.

Repeat with another layer of the mocha mixture and coconut. You can garnish with some extra whipped topping, more pecans or some chocolate shavings, but really, it is fine just the way it is.

Instructions

  • In a clear glass or cup, spoon some of the mocha mixture into the bottom. Sprinkle the top with some coconut.
  • Repeat with another layer of the mocha mixture and coconut. You can garnish with some extra whipped topping, more pecans or some chocolate shavings, but it is fine just the way it is.
