Cream cheese is a lifesaver on a Keto diet! Heck…..it’s a lifesaver even if you aren’t on a low-carb diet! Cream cheese is one of the most versatile food products around. Used in sweet or savory dishes, sauces or spreads, dips and desserts, cream cheese adds pizzazz to whatever you add it to.
Fat bombs are similar to no-bake cookies. You can eat them immediately or freeze them for later. If you like an almond flavor, you will love these! You don’t have to be on a Keto diet to enjoy these treats!
Ingredients
1 brick cream cheese, slightly softened
1/2 cup creamy almond butter
3 tsp. almond extract
2 squirts of your favorite liquid sweetener, to taste (make sure you taste it for sweetness to adjust)
1 cup unsweetened coconut, for rolling
1 tsp, granulated or powdered sweetener of your choice
Instructions
In a bowl, mix together the almond butter, cream cheese, almond extract and liquid sweetener until thoroughly combined. You can use an electric mixer to do this to make your life easier. Taste the mixture for balanced sweetness. Add more liquid sweetener and almond extract to your liking. It is a sweet treat, so if the mixture is not sweet enough, no one will want to eat it. Tasting to adjust the flavor is imperative. Chill the mixture for 30 minutes in the refrigerator.
In a small bowl, combine the coconut and granulated sweetener. Give it a stir to combine.
Remove the cream cheese mixture from the refrigerator and form it into balls. Roll in the coconut and place it on a cookie sheet. Flash freeze in the freezer until hard. Remove from the freezer and place in a plastic storage bag or container. Freezing the fat bombs before placing them in a storage bag keeps them from sticking together. You can store it in the freezer or in the refrigerator. These will not last very long because they will get eaten quickly, so there is no concern about how long they will keep in the refrigerator or freezer. Enjoy!
