Meal Prep for the Week of September 25, 2023

My original meal plan kind of blew up this week, but flexibility is the key when this happens. I had to rearrange about three times. In the end, all was well and dinner made it onto the table every night.

The Menu

Monday – Tacos

Tuesday– Chicken Caprese, Broccoli, Salad

Wednesday – Grilled Salmon Tango, Curried Cauliflower, Salad

Thursday – We had a new air conditioning system installed. The workmen did not get done until 8:00 p.m. We ended up with Popeye’s Chicken.

Friday – Zucchini Rollatini, Grilled Portabello Mushroom Salad with Orange Vinaigrette, Green Beans

Saturday – Leftovers

Sunday – Thai Chicken Drumsticks, Green Beans, Salad

Breakfast – Waffles with Blueberry Compote and Ricotta Cream, Breakfast Sandwiches, Cherry Vanilla Scones

Lunch – Leftovers, Sandwiches

Snack – Homemade French Onion Dip with Low Carb Pita Chips

Thawing

Salmon – Grilled Salmon Tango

Chicken Cutlets – Chicken Caprese

Ground turkey – Breakfast Sandwiches

Bacon/Turkey Bacon – Breakfast Sandwiches

Chicken Drumsticks – Thai Chicken Drumsticks

Italian Chicken Sausage – Zucchini Rollatini

Ground Beef – Tacos

Green Onion – Grilled Salmon Tango, Portobello, Mushroom Salad with Orange Vinaigrette

Onion – French Onion Dip

Cauliflower – Curried Cauliflower
