Meal Prep for the Week of November 4, 2024

October got away from me. Life started blowing up at the beginning of April and time has not gotten us past it. Our household has had surgeries, illnesses, hurricane damage, renovations, and two deaths in the family, one of which was my elderly mother. I hope that will be the end of the difficulties this year.

I have had little time to meal prep during the last few months. I have also taken a drastic dive away from my low-carb lifestyle, which means that I have gained some extra pounds. I hope that I can stick to my meal plan and eat more healthy foods to get back on track. To do that, I am planning a strict Keto meal plan for the next two weeks. Here we go!!

Monday – Spinach and Cheese Manicotti, Salad, Roasted Broccoli

Tuesday – Popeyes Chicken, Red Beans

Wednesday – Korean Marinated Chicken, Resistant Starch Rice, Asparagus with Sesame Seeds

Thursday – Fresh Salmon Croquettes, Homemade Tartar Sauce, Keto Coleslaw

Friday – Leftovers

Saturday – Keto Hot Dogs

Sunday – Chicken Meatballs and Spaghetti, Greek Salad

Breakfast – Low Carb Turkey Sausage Kolaches

Lunch – HEB Broccoli Cheddar Soup, Meatloaf Sandwiches

Snack – Popcorn, Sugar-Free Vanilla Yogurt with Keto Granola and Sugar-Free Chocolate Chips, Keto Chocolate Nut Clusters, Plums

Bone-In Chicken Breast – Korean Marinated Chicken

Salmon – Salmon Croquettes

Hot Dogs – Keto Hot Dogs

Resistant Starch Rice – Premade and stored in the freezer

Amy’s Chicken Meatballs – Spaghetti and Meatballs

Turkey Sausage Links – Low-Carb Turkey Kolaches

Onion – Korean Marinated Chicken, Meatloaf

Pear – Korean Marinated Chicken

Make Resistant Starch Rice – Side Dish

Trim Asparagus – Asparagus with Sesame Seeds

Make Resistant Starch Spaghetti – Chicken Meatballs and Spaghetti

Homemade Tartar Sauce – Salmon Croquettes

Meatloaf – Meatloaf Sandwiches

Low-Carb Turkey Sausage Kolaches – Breakfast
