Greek Salad is a classic salad variety. This crunchy salad pairs well with Italian and Greek food, but it can also stand alone. The tangy Mediterranean flavors, along with olives and feta cheese, provide an explosion of texture to any meal.
Ingredients
2 cloves garlic, minced
1/3 cup extra virgin olive oil
1 lemon, juiced
Salt and pepper to taste
1 tsp. dried oregano
2 heads of romaine lettuce, washed and sliced
1 cup grape tomatoes, cut in half
1/2 red onion, sliced
1/2 cucumber, sliced
1 container feta cheese, crumbled
1 small can sliced black olives
Instructions
Whisk together the garlic, olive oil, lemon juice, salt, pepper and oregano in a bowl.
Divide the romaine between bowls.
Add grape tomatoes, cucumber, sliced red onion, feta cheese and black olives. Drizzle the dressing over the salad and toss to coat.
