There’s just something special about Grandma’s recipes, isn’t there? My maternal grandmother made the best coleslaw, creamy, tangy, and just the right amount of sweet. The only problem? Her dressing was loaded with sugar. I couldn’t let that recipe disappear, so I gave it a low-carb makeover! This Keto Coleslaw keeps all the classic flavor and creamy crunch of Grandma’s version, just without the sugar. While nothing will ever truly beat her original, I have to say, this one comes deliciously close.
Ingredients
1 bag coleslaw mix
1/2 cup mayonnaise
1 Tbsp. low carb sweetener (I used Swerve granular)
1/4 cup pickle juice
Salt and pepper
Instructions
In a small bowl, combine the mayonnaise, sweetener, pickle juice, salt and pepper.

Add the coleslaw mix to a large bowl.

Pour the dressing over the coleslaw mix.

Toss to combine until the coleslaw is coated. Chill until ready to use.

This coleslaw is the perfect accompaniment for burgers, hot dogs or barbecue. You won’t miss the fries.
