My maternal grandmother made THE BEST coleslaw. Unfortunately, her dressing recipe is loaded with sugar. I changed her recipe slightly to eliminate the sugar while retaining the flavor. Of course, nothing is ever better than your grandma’s cooking, but I came pretty close with this one.
Ingredients
1 bag coleslaw mix
1/2 cup mayonnaise
1 Tbsp. low carb sweetener (I used Swerve granular)
1/4 cup pickle juice
Salt and pepper
Instructions
In a small bowl, combine the mayonnaise, sweetener, pickle juice, salt and pepper.
Add the coleslaw mix into a large bowl.
Pour the dressing over the coleslaw mix.
Toss to combine until the coleslaw is coated. Chill until ready to use.
This coleslaw is the perfect accompaniment for burgers, hot dogs or barbecue. You won’t miss the fries.
