My grandmother made the best cabbage. I do not think that I will ever be able to get my cabbage to taste like hers. Actually, I probably have replicated it perfectly, but in my mind’s eye, it will never quite be the same. There is something about a revered grandmother’s cooking that makes one think that recreating hers is a lofty endeavor. In any event, I think this cabbage is really good, so I hope you give it a try.
Ingredients
1 head cabbage, cored and shredded or roughly chopped
Bacon grease about 4 Tbsp.
1 -2 tsp. sugar or sweetener of choice
Salt and pepper to taste
Instructions
- Heat the bacon grease in the bottom of a Dutch oven.
- Place the chopped or shredded cabbage in the pan with the bacon grease. Place a lid on the Dutch oven and allow it to cook for a couple of minutes.
- Remove the lid and toss the cabbage using some tongs. Place the lid on the pot and allow it to cook for a couple of more minutes.
- Remove the lid and toss again. Continue in this manner until the cabbage is wilted and soft.
- Add the salt and pepper and stir.
- When the cabbage is sufficiently softened, add the sugar or sweetener. Stir to combine and cook another couple of minutes before serving.
