Old Time Cabbage

My grandmother made the best cabbage. I do not think that I will ever be able to get my cabbage to taste like hers. Actually, I probably have replicated it perfectly, but in my mind’s eye, it will never quite be the same. There is something about a revered grandmother’s cooking that makes one think that recreating hers is a lofty endeavor. In any event, I think this cabbage is really good, so I hope you give it a try.

Ingredients

1 head cabbage, cored and shredded or roughly chopped

Bacon grease about 4 Tbsp.

1 -2 tsp. sugar or sweetener of choice

Salt and pepper to taste

Instructions

  1. Heat the bacon grease in the bottom of a Dutch oven.
  2. Place the chopped or shredded cabbage in the pan with the bacon grease. Place a lid on the Dutch oven and allow it to cook for a couple of minutes.
  3. Remove the lid and toss the cabbage using some tongs. Place the lid on the pot and allow it to cook for a couple of more minutes.
  4. Remove the lid and toss again. Continue in this manner until the cabbage is wilted and soft.
  5. Add the salt and pepper and stir.
  6. When the cabbage is sufficiently softened, add the sugar or sweetener. Stir to combine and cook another couple of minutes before serving.
