Do you ever have a week that starts out completely planned, and then BOOM! Does something happen to completely derail all of it? This was one of those weeks! Fortunately, I had gotten some meal prepping completed before the week got weird!

Menu Plan

Monday Cajun Steak, Roasted broccoli, salad

Tuesday Pecan Chicken, Cheesy Queso Cabbage, salad

Wednesday – Beef Vegetable Soup

Thursday Low Carb Bacon Cheeseburger Casserole, Green Beans with Tomatoes, salad

Friday – Leftovers

Saturday Sweet and Spicy Chicken Thighs, starch-resistant rice, steamed baby broccoli

Sunday – Starch-resistant Spaghetti with Chicken, Sundried Tomatoes and Cheese

Breakfast Fried Egg Sandwiches, Catalina Crunch cereal

Lunches – Caeser salad with steak, sandwiches

Snacks – No snacks this week.
