Low-Carb Cheeseburger Casserole

Sometimes I come up with a casserole idea because I don’t have a low-carb bread option that is appropriate for what I want to do. Low-Carb Cheeseburger Casserole is one that I came up with on the fly because I did not have any Keto hamburger buns on hand at the time. Sometimes, the ingredients still fit together in a different way. I think it’s a winner!

Ingredients

2 Tbsp. olive oil

1 1/2 lb. ground beef

1 onion, chopped

1 tsp. garlic, minced

1 can tomato paste

4 eggs, beaten

2 tsp. Montreal steak seasoning

1/4 cup mayonnaise

1/2 block cream cheese, softened

1/4 cup half-and-half or cream

2 Tbsp. ketchup

1 Tbsp. Worcestershire

(Optional) 1 Tbsp. yellow mustard

1 tsp. seasoned salt

1 tsp. pepper

1 tsp. Tabasco hot sauce

1 8-oz. bag cheddar cheese, shredded and divided

1 cup of white cheddar cheese, shredded and divided

4 strips of bacon, cooked and crumbled

(Optional) Dill pickle slices

Instructions

Brown the ground beef, onion and garlic in a pan with a little bit of olive oil.

In the meantime, mix together the eggs, tomato paste and Montreal steak seasoning in a medium bowl. Stir to combine.

In a separate bowl, combine the mayonnaise, softened cream cheese and half and half. Whisk until smooth. Add to the egg mixture. Add the ketchup, Worcestershire, mustard, salt, pepper and hot sauce.

At this point, the ground beef should be cooked. Drain the beef and place in a greased baking dish. Pour the contents of the bowl over the ground beef and stir to combine.

Add half the cheese to the baking dish and stir to combine. Sprinkle the crumbled bacon over the top and cover with the remaining cheese. Bake for 30 minutes until the cheese is melted and slightly browned and the casserole is heated through.

Serve with a tossed salad and some roasted green beans for a well-balanced meal.
