Do you ever have a week that starts out completely planned, and then BOOM! Does something happen to completely derail all of it? This was one of those weeks! Fortunately, I had gotten some meal prepping completed before the week got weird!

Wednesday – Beef Vegetable Soup

Saturday Sweet and Spicy Chicken Thighs, Starch-Resistant rice, Steamed Baby Broccoli

Sunday – Starch-Resistant Spaghetti with Chicken, Sundried Tomatoes and Cheese

Breakfast Fried Egg Sandwiches, Catalina Crunch Cereal

Lunches – Caeser Salad with Steak, Sandwiches

Snacks – No snacks this week.
