Meal Prep for the Week of June 6, 2023

If you are a new visitor to my website, welcome to my website! Every week (or almost every week), I post a meal plan and my meal prep plan. I dedicate a day of the week, usually Monday, to be my own sous chef by preparing, chopping, slicing, thawing and making ahead any ingredients that I can to help make dinner get to the table faster throughout the week.

Taking a day to meal prep like this is a sacrifice to do other things, but it is worth it in the end to get it done all at once. This may not work for everyone the way I do it, but maybe it can be an inspiration for you to devise your own plan to routinely meal prep in some other way. Do you meal prep? Menu Plan

Monday – Mexican Vegetable Soup with Avocado and Lime

Tuesday – Air Fryer Chicken Parmesan, Starch-Resistant Spaghetti, Mediterranean Vegetables

Wednesday – Southwest Shrimp Tacos

Thursday Grilled Chicken Thighs and Drums, Green Bean Casserole, Keto Coleslaw

Friday – Keto Meatball Sliders, Keto Coleslaw, Keto Dill Pickle Chips

Saturday – We had a late day, so we picked something up while out

Sunday – Paprika Chicken, Turmeric Rice, Roasted Cauliflower with Spiced Yogurt

Breakfast – Keto Sausage Pinwheels

Thawing

Rehydrate poblano peppers – Southwest Shrimp Tacos (I used some of my freeze-dried poblano peppers, but chop some fresh ones as a substitute for freeze-dried)

Freezing blueberries – Kroger also had 18 oz. cartons of blueberries on sale for $1.99. I spread the blueberries on a baking sheet and flash-freeze them. After they are frozen, I place them into a Ziploc bag to store in the freezer to use in future recipes.

Pork Roast – I bought a very large pork loin roast at Costco for $1.49/lb. I cut that up into 7 pork loin chops, 2 small roasts and some cubes. I expect to get at least 8 meals out of this one roast. Score!

Freeze-dried strawberries – I found fresh strawberries at Randalls for $1.50 a carton. I bought 6 cartons. We ate some fresh and freeze-dried the rest. Many went into a mylar bag, but only the ones my husband didn’t eat first.

Freeze-dried eggs – Kroger had 18-count eggs on sale for $1.99. I bought 3 cartons. I already had some eggs on hand, so I whisked these up and poured them into my freeze-dryer trays. After they were dry, I scooped them into my food processor to pulverize them. The powder goes into a mylar bag with an oxygen absorber and is sealed for long-term storage.
