Plump, juicy shrimp coated in a crispy, delicate coating of flavorful breadcrumbs makes anyone look forward to the end of the day! Stick around to see how this is totally Keto friendly!
Ingredients
2 lbs. shrimp, shelled, cleaned and tails removed
1-2 eggs (1 egg per pound of shrimp), beaten
2 tsp. garlic, minced
For the breading
Keto bread
1 cup fresh parsley, stems removed
1/2 cup grated Parmesan cheese
Seasoned salt and pepper to taste
1 Tbsp. Italian seasoning
or
Store-bought Italian breadcrumbs (if not on a Keto diet)
Instructions
Soak the shelled shrimp in some milk for about 30 minutes. Meanwhile, make your breadcrumbs.
If you follow a Keto or low-carb diet, you can make your own Keto breadcrumbs from Keto loaf bread. This method also works for those following a gluten-free diet because you can use gluten-free loaf bread to make breadcrumbs. Of course, if you are not following a special diet, you can use store-bought bread crumbs at the grocery store. Any of these methods produce the same results.
To make Keto breadcrumbs toast some bread slices. I usually make more than I need for a recipe and store it in a resealable plastic freezer bag in the freezer to use whenever I need it.
To my plain breadcrumbs, I add fresh parsley, Parmesan, a little salt and Italian seasoning. I like to whiz the breadcrumbs around in the food processor to make them very fine, plus the parsley gets a good chop without much effort.
When the shrimp is done soaking, rinse thoroughly in a colander. Place the shrimp in a plastic resealable bag. Add the beaten eggs and garlic to the bag and massage the shrimp so that all are coated with egg.
Place the breadcrumbs in a bowl or shallow plate. Coat the shrimp in the breadcrumbs and place on a baking sheet outfitted with a wire rack sprayed with cooking spray.
When all the shrimp are on the wire rack, spray the tops of the shrimp with cooking spray. Alternatively, you could air fry these, but I have not used that method for this recipe yet, so I do not have the time and temperature.
Place the shrimp in a 350-degree oven for 15 minutes or until the shrimp are no longer pink and the crust is golden brown.
