Super Easy Grilled Squash

This recipe is such a no-brainer that I hesitated to post it, but I am going to do it anyway. Grilling squash is easy, but I prefer to do it on an indoor grill. You can still get it charred, like on an outdoor grill, but it is easier for the squash to hold together on an indoor grill and not slip through the grill grate. Grilled squash is an excellent Keto side dish with grilled steak, chicken or other grilled meats. Grilled squash adds freshness to any meal!

Ingredients

3-4 yellow squash, sliced into rounds

Olive oil to coat the squash

Plenty of Montreal steak seasoning

Instructions

Slice the squash into rounds. Place the rounds in a bowl and drizzle with olive oil to coat them.

Generously sprinkle plenty of Montreal steak seasoning over the squash and toss. Make sure that all sides of the squash rounds have some seasoning on them.

Spray the indoor grill generously with cooking spray. The worst thing that could happen to this recipe is if the squash sticks to the grill surface.

Place the squash evenly over the grill. Grill for a couple of minutes on each side or until you have enough char for your taste.

See? Isn’t that the easiest? Grilled squash pairs well with steak, pork or chicken. Sometimes the same old same old side dishes become tiresome. Many times, a simple twist to something ordinary elevates it into something extraordinary and different.

  • Indoor or outdoor grill
  • Vegetable grilling pan (if using an outdoor grill)
