This is the fastest salad in the West! It’s my go-to salad when I don’t feel like hunting down and chopping salad ingredients. The few ingredients can stand independently, but you can use this as a base for a salad with more ingredients. Even when I don’t feel like making a salad, I can throw this one together without effort. I’m always glad that I added a salad to round out my meal.
Ingredients
2-3 cups butter lettuce or Spring mix, 1 cup per serving
As many cherry tomatoes as desired
As many black olives as desired
Red wine vinaigrette
Instructions
I like to make salad by the individual bowl because there are only two people in my house who are willing to eat salad, but you can easily make a big serving bowl to serve more people. Place the desired amount of salad in a bowl to make this salad for individual bowls. You can add as much lettuce as you like. One cup is an approximation.
Top with tomatoes.
Then, add some olives. Add black, kalamata or green olives, sliced, chopped or whole.
Serve with your favorite red wine vinaigrette.
