A good egg salad on some toasted Keto bread…..DELICIOUS!! The humble ingredients in egg salad are perfect for a simple lunch and make a lovely addition to an elegant gathering. The fresh ingredients along with the creamy texture pair well with any occasion.
Ingredients
8 hard-boiled eggs, chopped
1/4 cup mayonnaise
3 oz. cream cheese, softened
1 green onion, chopped fine
1/4 cup green or red bell pepper, chopped fine
1/4 cup celery, chopped fine
1/4 cup dill or sweet pickle relish
2 Tbsp. fresh parsley, chopped fine
3/4 tsp. garlic powder
1/8 tsp. dried dill weed
2 Tbsp, fresh chives, chopped fine
2 Tbsp. yellow mustard
1 tsp. salt
1/4 tsp. pepper
1 sprig fresh dill and a sprinkling of paprika for garnish
Instructions
Place the chopped hard-boiled eggs, bell pepper and celery in a large bowl. Stir gently to combine.
In a separate bowl, combine the softened cream cheese, mayonnaise, pickle relish, chopped parsley, mustard, garlic powder, dried dill, fresh chives, salt and pepper. Stir until thoroughly combined.
Pour the dressing over the egg mixture. Fold in the dressing until the ingredients are combined. Place in a bowl and garnish with paprika and a sprig of fresh dill. Scoop it onto a bed of lettuce or put it between some toasted bread as I did on this day. I served my Egg Salad Sandwich with some Avocado Fries in the Air Fryer and some tomato slices.
