Cinnamon Flax Muffins

I may be dating myself, but does anyone remember singing this to their kids? I’m sure everyone loved the Muffin Man no matter where he lived. Who doesn’t like a good muffin? Muffins are amazing!

These Cinnamon Flax muffins are made with flax seed meal and a hint of cinnamon with a lovely creamy glaze on top for sweetness. The recipe below uses a sweetener alternative, but I also proiide real sugar quantities to use if you are not following a diet. Either way, I think the Muffin Man would approve.

Ingredients

1 cup flax seed meal

4 eggs

1/2 cup vegetable oil

1 cup granulated Swerve (or 1/2 cup regular sugar)

1/4 cup coconut flour

3 tsp. vanilla

3 tsp. cinnamon

1 tsp. lemon juice

1/2 tsp. baking soda

1/8 tsp. salt

1 cup chopped pecans

For the Glaze:

1 cup powdered monk fruit sweetener (or use the same amount of regular powdered sugar)

1 Tbsp. heavy cream

1 tsp. vanilla

Instructions

Preheat oven to 325 degrees. In the bowl of an electric mixer, combine the muffin ingredients. Mix with an electric mixer until well combined. The batter will be very thick. Taste the batter and add more sweetener if you think it needs more. All sweeteners have varying degrees of sweetness, so it is important to taste the batter and adjust if necessary. The Muffin Man would not like muffins that were not sweet enough.

Line a muffin tin with cupcake liners or spray with cooking spray. Fill the cups 3/4 full with the batter. Bake for 18-25 minutes. Test the centers of the muffins with a toothpick. If the toothpick comes out clean, the muffins are done. Remove from the oven and allow to cool.

Meanwhile in a small bowl, combine the glaze ingredients. Stir until smooth.

The glaze should be pourable but not too thin. A little bit of thickness is fine so that the glaze remains on top of the muffins. If it is too thin, the glaze will not stay on the muffins.

    1. The Keto cop (aka teenage young man) approved of this recipe. Make sure you taste the batter before baking to adjust the sweetness to your liking. You can make the glaze with almond milk or coconut milk, but it may not be as thick. I know you are itchen; to get in your kitchen! LOL

    1. I hope you like it! You can use almond milk instead of whole milk for the glaze. It won’t be as thick, but it will be tasty. Make sure you taste the batter before baking to adjust the sweetness. I have found this to be a very important step.
